Preparation and Storage

Recipes
Meat Curry Recipe
Ingredients:
1kg Meat - cut in serving pieces
80gm Alagappa's Meat Curry Powder
4 medium size Potatoes - quartered
4 cups Coconut milk
4 medium size Tomatoes - halved
5 tbsp oil
Salt to taste

Mixture ”A”
Spices to grind
15 Shallots
2 Cloves garlic
4cm Ginger

Mixture ”B”
Whole spices
1 Star-anise
6 cm Cinnamon
4 Cloves
3 Cardamons - crushed
Curry leaves

Method
1 Heat oil in pan and fry mixture ”B” for 1/2 minutes.
2 Add mixture ”A” and fry till fragrant.
3 Put in meat and salt to taste and stir fry for 15 minutes (till meat cooked).
4 After that add Alagappa's Meat Curry Powder, coconut milk, tomatoes and potatoes.
5 Cook over moderate heat till meat is tender then serve hot.
